Kasoy are edible “nuts” of the cashew tree, which is native to Brazil.

A “nut” is attached to what looks like a “fruit” (cashew apple) but botanically speaking the nut is the main fruit and the pear-shaped cashew apple is a pseudofruit. There are red and orange cashew fruits in other countries, but in the Philippines, the skin of the cashew fruit is invariably yellow.

Prinsesang nakaupo sa tasa

The cashew apple may be eaten but because it bruises easily, it is not transported to faraway markets. It is the cashew nut that is roasted for mass consumption.

Scientific name: Anacardium occidentale or Anacardium curatellifolium

Also called balubad to the people of Pampanga province and the surrounding areas.
