Bopis (bopiz) is a spicy Filipino dish made of small pieces of offal such as pork lungs, spleen and heart that are sautéed in onions and garlic, then simmered in vinegar.
What can give this dish some color is the addition of red and green siling labuyo (small chilies) or small pieces of bell pepper during the stir-frying.
Bopis is usually eaten by Filipino men while drinking liquor.
It is called kandingga in the Bicol region.
