Recipe for LECHON PAKSIW
The traditional lechon is a whole pig that can serve at least 50 people. It's not uncommon to have leftovers. What do you do with it? Try this easy recipe for lechon paksiw! A paksiw is a Filipino stew whose essential ingredient is suka (white vinegar).
INGREDIENTS FOR MAKING LECHON PAKSIW
3/4 kg lechon or roasted pork, chopped up
2 cups lechon sauce
1 bay leaf
1/4 cup white vinegar
about 1 cup water (adjust for desired thickness)
2 tbsp soy sauce
1/3 cup brown sugar
1 tsp garlic, crushed
sprig of oregano
short cinnamon stick
salt and black pepper to taste
HOW TO MAKE LECHON PAKSIW
Mix the ingredients and simmer gently for an hour.
