Recipe for CHICKEN ADOBO

Filipino Food - Meat Dishes


Adobong manok means chicken prepared adobo style.

To cook meat or vegetables adobo style, Filipinos use vinegar, soy sauce, peppercorns (if unavailable, then ground black pepper) and a bay leaf. Here is a simple recipe for chicken adobo. Remember that adobo is a very flexible dish, so feel free to experiment.

INGREDIENTS  for CHICKEN ADOBO

2 lbs chicken
6 chicken livers

1/4 c vinegar
1/2 c water
1 tsp minced garlic
1 tsp peppercorns
3 tbsp soy sauce
1 bay leaf, torn into pieces
salt to taste

HOW TO COOK CHICKEN ADOBO

1. Soak all the ingredients in a bowl for 30 minutes to an hour.
2. Remove the livers and place the rest of the ingredients in a covered saucepan.
3. Simmer until chicken is almost done.
4. Add the livers and simmer for five more minutes.
5. Drain the meat and save the liquid.
6. Heat cooking oil in a frying pan and brown the chicken.
7. Combine the browned chicken and the liquid in a saucepan. Simmer for five minutes.


The easiest, quickest way to cook adobong manok would be to cut up a chicken into two-inch pieces. You can use whole thighs or whole breasts − just add more water and lengthen the simmering time.


Don't forget to serve adobong manok with freshly boiled white rice called kanin. It's essential in every Filipino meal.
